Sprouted Moong beans and oats idli is an impeccable way to start a healthy day with a healthy breakfast. These idlis have healthy ingredients like sprouted green moong and oats instead of rice. So, this is an ideal breakfast and snack for diabetic and overweight people.
Moong bean is the easiest bean to sprout. It has a nutty and crispy taste. Moong bean sprout is called a miracle food because of its high nutritional value. These sprouts are low in calories and rich in dietary fiber. .Moong beans are a high source of nutrients like proteins, manganese, potassium, magnesium, folate, copper, zinc and vitamins B, C & K. These beans also protect us against several diseases like heart disease, diabetes and cancer.
Ingredients
- 1 cup Green moong dal, sprouted
- 2 tbsp. Carrot, finely chopped
- 2 tbsp. French beans, finely chopped
- 1 tbsp. Fresh Curry leaves
- 1 tsp Ginger paste
- 1 tsp Green chili paste
- ½ cup oats (coarsely ground)
- 1 sachet/1 tsp Fruit salt (ENO)
- Salt to taste
Method of Preparation
- Steam the sprouts till soft
- Now Cool the sprouted dal and grind it in a mixer to make a thick paste
- Add ground oats, finally chopped carrots, green beans, curry leaves, ginger, green chili paste, salt and mix well. Add water if needed
- Add fruit salt to it and mix it gently
- Grease idli steamer plates with little oil and fill the mixture gently into idli plates
- Set the idli steamer into a large, pre heated pot with water in the bottom for steaming
- Steam it for 15 minutes till they are fluffy and nicely cooked
- Serve hot with green chutney or sambha
